
At St. Joseph’s, we’re incredibly fortunate to have parent volunteers who bring their time, talents, and passions through our doors every day. One of those parents has truly dug in—literally—to transform our outdoor learning spaces.
Meet Anthony Collins, proud father of two SJS students. Anthony is an experienced farmer and composter who brings so much knowledge and talent to our garden and greenhouse project.
From rebuilding our raised beds to launching our composting initiative and breathing new life into the greenhouse, Anthony is the
green thumb at the center of our budding outdoor classroom. After a winter of preparation, we will launch a student garden club in the spring, where young minds can get their hands dirty and watch nature work its magic.
Anthony is a treasure trove of gardening wisdom, and we can’t wait to share his incredible contributions to our school community!
What’s Growing Now:
Over the next week, Anthony will be planting hyacinth and tulip bulbs into our raised beds. Nestled in for winter, they’ll be ready to burst into color come spring. Meanwhile, we’ll be keeping an eye on the greenhouse in the next few days, as herbs and mixed greens will be starting to sprout. We’re stocked up with vegetable and herb seeds to be planted once the weather warms up.
Chef Chelsia and our entire team of nutrition partners are greatly looking forward to serving us the bounty of vegetables, fruits, and herbs from our garden! Our lunch ladies have already served us lettuce from the SJS garden beds. They are actively feeding the compost with scraps from the fresh fruits and vegetables that make up our lunches.
Anthony is on top of integrating our composting initiative into the garden. This initiative really allows our wonderful, eco-conscious nutrition program to come full circle. We’re thrilled to see these bins being used, and are grateful to Anthony for keeping things balanced and decomposing beautifully.
